Spicy Tuna Rice Bowl

Spicy Tuna Rice Bowl
Course Lunch, Dinner
Servings 1 serving
Ingredients:
1 tbsp Sriracha
1 tbsp mayo
½ cup microwaveable brown rice
½ cup shelled edamame beans
½ large carrot, sliced into ribbons
¼ large cucumber, chopped
3 radishes, sliced
Garnishes of choice: cilantro, jalapenos, furikake seasoning, seaweed sheets, avocado, etc
Instructions:
Drain excess liquid from can of tuna. To a small bowl, add drained tuna, Sriracha, and mayo. Mix until well combined. Set aside.
To a wide plate/bowl, add brown rice, edamame, radishes, cucumbers, carrots, and the spicy tuna mixture.
Add garnishes of choice, such as cilantro, jalapenos, and furikake seasoning. Drizzle with extra Sriracha if desired.
