Rainbow Orzo Salad

If you’re looking for a fresh, colorful dish to kick off summer, this Rainbow Orzo Salad is it! It’s light, vibrant, and packed with crisp veggies, briny olives, and creamy feta, plus a bold, garlicky flavor thanks to Hanley’s Sensation Dressing that ties everything together effortlessly.

This is one of those recipes that feels a little elevated but couldn’t be easier to throw together. It’s perfect for meal prep, a quick lunch, or bringing to a summer gathering when you want something that looks beautiful and tastes even better. The combination of textures—tender orzo, crunchy vegetables, and creamy cheese—makes every bite satisfying without feeling heavy.

From a nutrition standpoint, you’re getting a great mix of fiber-rich veggies, heart-healthy fats from olives, and a little protein from feta to help keep you full. It’s the kind of balanced, feel-good dish that fits seamlessly into real life, no overthinking required!

Pro tip: This salad gets even better after it sits for a bit, so don’t be afraid to make it ahead of time. Not a feta fan? Swap in parmesan, or keep it dairy-free with avocado.
