Spicy Truffle Egg Salad

This is not your grandmother’s egg salad! This version gets an upgrade with a delicious truffle and spicy kick, thanks to TRUFF hot sauce, which I consider a pantry staple at this point. It’s truly one of the best hot sauces I’ve ever tried! It’s not just spicy, it has real flavor and, of course, that truffle taste we love.

If you don’t have TRUFF on hand, you can also make this with a different hot sauce; you just won’t have that truffle flavor.

Not a fan of spice at all? That’s okay too! Just leave out the hot sauce, and you’ve got a super simple egg salad. Feel free to add pickles or celery too for a nice crunch and extra veggies.

This is a meal-prep-friendly recipe that will keep in your fridge for a few days. I love having a few high-protein salads like these on hand for the week to pair with crackers and veggies for a super simple lunch. Chicken salad and tuna salad are great options too, and the flavor combinations are endless!

Spicy Truffle Egg Salad

Course Breakfast, Snacks

Servings 2 servings

Ingredients:

  • 3 hard-boiled eggs, chopped

  • 1/4 cup red onion, chopped

  • Sprinkle green goddess seasoning (optional)

  • Pepper & truffle salt (or regular)

  • 1 tsp Dijon mustard

  • 1 TBSP TRUFF Black Truffle Hot Sauce

  • 1 heaping TBSP Greek yogurt

Instructions:

  1. Add all ingredients to a bowl. Combine with a spatula until well mixed.
    Serve over toast, crackers, or veggies.

  2. If desired, top with microgreens, red pepper flakes, or truffle honey.
