Loaded Spring Hummus
This 10-minute Loaded Springy Hummus is an easy way to upgrade a classic snack or appetizer. It starts with a base of hummus, then gets topped with a simple mix of chopped cucumber, pickled turnips, fresh herbs, garlic, lemon juice, and olive oil. The feta on top adds a little extra flavor and brings everything together. It’s fresh, balanced, and comes together quickly, making it great for last-minute hosting or a quick snack at home.
I love this recipe because it turns a store-bought tub of hummus into something that feels a little more special without much effort. The mix of textures and flavors keeps it interesting, and you can easily swap in pickled carrots or onions if you can’t find turnips. Loaded Spring Hummus
Course Snacks, Appetizers
Servings 8-10 servings
Ingredients:
1/2 English cucumber, chopped
1/2 cup chopped pickled turnips (can sub pickled carrots)
3 tbsp chopped basil and dill
1/2 small clove of garlic, grated
Juice of 1/2 lemon
1 tbsp olive oil
Salt & pepper to taste
1/3 cup crumbled feta cheese
1 tub Ithaca hummus
Instructions:
In a small bowl, mix together cucumber, pickled turnips, herbs, garlic, lemon juice, olive oil, and salt and pepper. Mix until well combined.
In a separate shallow, wide bowl, spread hummus onto the bottom of the bowl. Then add the cucumber and turnip mixture. Sprinkle feta cheese over hummus and veggies and enjoy with crackers or toasted bread.
